The Wiiebrötli is somewhat like a short bread cookie. My grandma used to bake these for Christmas. The dough cannot be overworked to get the right consistency of the cookie. There is a little bit of wine in it and I used a full-bodied Edelzwicker, which is blend of Pinot Gris, Riesling, Gewuertztraminer and Pinot Blanc. This adds a light fruitiness to the cookie, which is crunchy and has a nice vanilla flavor up front, which will mingle with the butter and cream flavor and will have a little fruitiness in the background from the wine.
Ingredients
Organic white wheat flour, organic sugar, organic heavy cream, wine, organic butter, organic egg, organic vanilla extract, baking soda.
