Jelänger Jelieber is a cookie recipe I found on a typical German recipe card, which are kept in tin cans. It is a relatively simple recipe, but it is the work that goes into the making of it that will make the texture so soft and silky. The egg yolk, butter, and sugar must be whisked long enough, to a very creamy and fluffy texture before adding the flour. We hand roll each cookie before flattening them and put a dent in it, where our homemade lemon preserve is placed.
When biting into a cookie you get a little crunch from the toasted almonds but right away you experience the softness and silkiness of the cookie and the wonderful buttery flavor, which will right away mingle with the sweetness of the lemon preserve and very light bitterness of the lemon rind. In the background you will pick up the earthier toasted notes of the almond pieces, sprinkled onto the cookie. It is a heavenly experience, not to sweet and all the flavors play so well together, irresistible!

Organic white wheat flour, organic butter, organic sugar, organic egg yolk, organic lemon rind, organic lemon juice, and organic almonds.
