/ ONION FLAT BREAD
Zwiebelwaaie is a well-known flat bread in the Baden region. Traditionally it is made during and after the onion harvest from July through November. Zwiebelwaaie is a typical example for a savory Waaie (flat bread) from the Baden region. The dough is a yeast dough of 80% organic white wheat flour and 20% organic whole wheat flour. Rolled out dough is topped with sliced and sautéed onions, which are tossed up with caraway seeds, topped with whisked up cream and eggs. Eating it you will taste the sweetness of the onions mixed with the salty savory flavors, which can be a little bit spicy, but then you get the creamy and egg flavors which make it richer but also more delicate. The baked dough adds substance and bread flavors to it. Once you take a bite you want more of this delicious flat bread!
