/ MARZIPAN BREAD
The Marzipanzopf is traditionally made for easter, but you find it many times year-round. No wonder, since it is such a tasty, delicious, and soft bread. The marzipan is mixed with lemon juice and additional egg whites, which gives it a creamy consistency. When spread onto the dough it is sprinkled with coars ground roasted almonds. After baking the Marzipan Zopf is right away brushed with an apricot brandy glaze. The bread has a light crust and an amazing soft inside. The marzipan filling is partially soaked up by the surrounding dough and gives it a nice soft, lightly moist texture. The softness and the crunch of the almonds are a great contrast and add to the chewing experience. The supple flavors of rosewater and vanilla in the marzipan mingle beautifully with the light butter and cake flavor of the bread. The apricot glaze gives it a little extra sweetness and a wonderful touch of apricot fruit.
