Flax seeds are another common addition to breads and rolls. It is a nice and healthy touch to our sourdough bread. Here too, you get a little bit of crunch from the toasted seeds of the crust. In the loaf, it adds a little burst of flax seed oil which adds more complexity to the breads flavor when you bit on them. Flax seeds are also good for your digestion and eating this bread is a healthy choice!
The Sourdough Bread is a blend of 55% wheat flour and 45% of dark rye flour. It has a great Sourdough flavor, because we make first a starter and a day later the actual dough for this bread. Because of the rye flour and the sourdough, the bread develops full flavors but very well balanced. The sourdough flavors mix with the hearty and earthier flavors of the rye flour. The rye flour keeps the inside of the bread moist and fresh while the wheat flour gives it some lightness. The higher acidity of this bread, due to the sourdough, keeps the bread longer fresh and can be kept longer than a regular wheat bread with yeast.
